Fresh Leaves of Kaffir Lime

The fresh leaf of the Kaffir Lime is an essential ingredient in Thai cooking.  Whole or cut leaves can be added to broths, soups, and stews, while chopped leaves are frequently used in salads, stir-fries, pastes, and fish cakes.

Both the leaves and the zest from the Kaffir Lime have an intense and unmistakable aroma and flavor that is a signature of traditional Thai dishes.

The Kaffir Lime

Kaffir Lime

(citrus x hystrix)
also known as
Thai lime, wild lime
Thai: makrut, som makrut
Burmese: shauk-nu
Indonesian: jerk purut, jeruk sambal
Malay: duan limau purut
Philippino: swangi

The Kaffir Lime is a tropical fruit native to Thailand.  The fruit itself is about the size of an average lime, but has a bumpy skin.  While the strongly-flavored zest from the lime is used in many Southeast Asian dishes, especially curries, the most popular part of the Kaffir Lime tree is its leaves.
